A super-healthy version of an absolute classic. I kid you not I had to stop myself eating the whole thing when it came out of the oven, it was that good!
PREP TIME - 15mins: COOK TIME - 50mins
Ingredients:
- 2 cups buckwheat flour
- 1/3 cup raw organic coconut sugar
- 2 tablespoons cinnamon
- 2 teaspoons baking powder
- 1/2 teaspoon mineral salt
- 4 very ripe bananas
- 1/3 cup coconut oil
- 2 teaspoons vanilla extract
- 1/2 cup raisins
- 1 cup crushed walnuts
Method:
- Preheat the oven to 175 degrees Celsius
- In a mixing bowl, combine the buckwheat flour, sugar, cinnamon, baking powder and mineral salt, and mix up well.
- Mash the ripe bananas and add into the mix, along with the coconut oil and vanilla extract
- I added walnuts for some healthy fats, and some raisins for a bit of extra sweetness - but use whatever extras you want
- Put the batter into a loaf pan (lightly greased with some extra virgin olive oil) and bake in the middle of the oven for 50 minutes

I seriously mean it - this will be so good that you might want to lose your entire mind and eat the whole thing all in one go…definitely one that you want to give a try!
